Beet Salad With Horseradish Yogourt

1 pound small beets

6 scallions

handful of fresh cilantro leaves

1 lemon

salt and pepper

2 tbsp Zinter Brown Horseradish Hot Pot

1 1/4 cups thick plain yogourt

Boil the beets until tender, about 20 minutes. Refresh in cold water and peel. Cut in small, bite sized chunks and place in a serving bowl.

Trim the scallions and cut across in thin slices. Add to the beets with the cilantro, juice from the lemon, and salt and pepper to taste.

Add the Zinter Brown Horseradish Hot Pot to the yogourt, then taste for flavor. If you prefer it stronger, add more Horseradish Hot Pot. Spoon over the beets and turn to coat evenly. Garnish with cilantro sprigs.

Serves 6 to 8 guests.
