Try This Simple Recipe For Peach And Mango Chutney
Here's a corn fritter recipe perfect for movie night or as an appetizer for entertaining. You can make your own ground rice by grinding white rice in a food processor. The ground rice makes the fritters crisper.

Corn Fritters With Peachy Mango Chutney*
1/2 cup ground rice or all-purpose flour
1/2 cup all-purpose flour
1/4 tsp baking powder
1 tsp Zinter Brown Gourmet Sea Salt & Pepper
1/2 tsp Zinter Brown Lavender/Lemon Greek Rub
1/2 cup water
1 egg, lightly beaten
2 cups corn kernels, cut from 3 large corn cobs or 2 cups niblets corn (canned or frozen)
4 spring onions (scallions), finely sliced
3 tbsp chopped fresh coriander (or cilantro)
1/4 cup oil
Zinter Brown Peachy Mango Chutney*
Sift the ground rice, flour, baking powder, Sea Salt & Pepper and Greek Rub into a bowl.
Add the egg, lemon juice and 1/2 cup water and beat to a smooth batter. Add the corn,
onion and coriander and stir to combine.
Heat the oil in a large non-stick frying pan over medium to high heat. When the oil is hot,
add 2 tablespoons of mixture for each fritter and flatten with the back of a spoon. Cook for
about 2 to 3 minutes, or until golden brown, then turn and cook the other side. Serve with
Peachy Mango Chutney*. Garnish with coriander leaves. Makes 20.
*Or substitute with Zinter Brown Jalapeno Pepper Jelly or any of our Pepper Jelly
