Open-Faced Feta And Leek Omelette With Gourmet Salsa Or Bruschetta

2 tbsp olive oil

2 leeks, washed and sliced (white part only)

Pinch of Zinter Brown Lavender/Lemon Greek Rub

3 small zucchini, finely sliced

2 tbsp chopped fresh mint

3 tbsp chopped fresh flat-leaf (Italian) parsley

6 eggs, lightly beaten with 2 tbsp water

4oz (115g) feta, drained

1 cup Zinter Brown Three Pepper Salsa Roja or Zinter Brown Italian Bruschetta Topping

Heat the grill to its highest setting. Place a 9 inch (22cm) non-stick frying pan (with a heatproof handle) over medium to high heat. Add the olive oil, leek, Zinter Brown Gourmet Sea Salt & Pepper and cook for 5 minutes, stirring occasionally. Add the zucchini and cook for another 5 minutes. Sprinkle with the herbs and pour the eggs on top. Crumble on the feta and cook for 5 minutes. Finish under the grill for another 5 minutes or until golden and bubbling.

Heat 1 cup Zinter Brown Three Pepper Salsa Roja or Zinter Brown Italian Bruschetta Topping in a saucepan. Season with Zinter Brown Gourmet Sea Salt & Pepper. Serve wedges of omelette with topping. Serves 4.
