Herbed Lamb Chops With Zinter Brown Cool Mint Sauce

2 tbsp olive oil

2 tsp Zinter Brown Gourmet Sea Salt & Pepper

1 tsp Zinter Brown Lavender/Lemon Greek Rub

12 French-trimmed lamb cutlets

1 small white onion, finely chopped

zest from 2 lemons

2 tbsp chopped fresh Italian parsley

1 tbsp chopped fresh mint

2 tbsp lemon juice

Stir the olive oil, Zinter Brown Gourmet Sea Salt & Pepper and Zinter Brown Greek Rub together in a small bowl. Brush over the cutlets. Marinade overnight.

Stir the onion, lemon zest, parsley, mint, lemon juice together in a small bowl.

Heat a large frying pan over high heat. Add the cutlets and cook for 2 minutes on each side. Don't overcook the meat should still be pink. Remove from the pan and place on a large platter. Before serving, spoon the onion and herb mixture over the cutlets. Serve with Zinter Brown Cool Mint Sauce.

Or replace the mint sauce with Zinter Brown Peachy Mango Chutney. Delicious with pork or veal chops, and chicken breasts as well!
