Gourmet Homemade Soup - A Delicious Pork Roast Recipe

Roasted Garlic & Onion Jam in both the pork roast recipe and the gourmet homemade soup recipe. You know what they say you can never get too much of a good thing!
Pork Roast Soup

Bone from pork hock roast
12-14 cups water
2 packets (or cubes) of beef bovril
1/2 medium sized onion (chopped)
1 tbsp salt (or to taste)
1 1/2 cups chopped celery (use stalks and leaves)
1 cup frozen kernel corn
1 can (28oz.) diced seasoned tomatoes
1-5oz. can tomato paste
1 heaping tbsp of Zinter Brown Roasted Garlic & Onion Jam
1/4 cup barley
This gourmet homemade soup uses the remainder of a previously cooked pork roast (bone-in), which had been roasted with a glaze of Zinter Brown Roasted Garlic & Onion Jam. When initially carving the roast, try to leave 2 or 3 cups of meat on the bone, to use in this soup base.
Using a large Dutch oven pot, simmer bone, covered in water for a couple of hours (until meat falls off the bone). Strain liquid through colander/strainer, keeping the broth. Recover bits of meat; discard any excess fat and gristle.
Return the strained liquid to pot, and add the remaining ingredients. Return finely chopped strained meat bits to the pot. Simmer for 1-2 hours, until barley is tender.
