Tomato & Olive Salad With Grilled Herbed Ricotta

3 cups (750g) ricotta

4 tbsp olive oil

Zinter Brown Gourmet Sea Salt & Pepper

Zinter Brown Lavender/Lemon Greek Rub

1/2 cup extra virgin olive oil

6 vine-ripened tomatoes

1 cup (30g) fresh basil leaves or 1 tbsp dried basil

24 Nicoise olives

1 tbsp balsamic vinegar

Distribute the ricotta and oil among six 1/2 cup (125 ml) ramekins. Sprinkle with Zinter Brown Gourmet Sea Salt & Pepper and Zinter Brown Lavender/Lemon Greek Rub. Drizzle a bit of olive oil on top. Grill under high heat until bubbling.
